海南粉是海南省最具特色的小吃,属于海派菜。该小吃流传历史久远,在海南岛北部的海口市、定安县和澄迈县的市镇居民中食用比较普遍,而且是节日喜庆必备的象征吉祥长寿的珍品。

海南粉多味浓香,柔润爽滑,刺激食欲,故多吃而不腻,爱吃辣的加一点辣椒酱则更起味,吃到末尾剩下少量粉时,加进一小碗热腾腾的海蚌汤掺和着吃,更是满口喷香,回味无穷。

 

用大米、番茨粉为原料制成米粉,加上老抽、蒜泥、花生油、或芝麻油、煮熟的黑豆芽、牛肉丝、炸鱿鱼丝、油炸花生米、炒芝麻仁末、脆炸面片、碎香菜 、竹笋 及酸菜等辅料,拌制而成。

Hainan noodles are the most distinctive snack in Hainan Province, belonging to the Haipai cuisine. This snack has a long history of popularity and is commonly consumed among residents of Haikou, Ding'an County, and Chengmai County in the northern part of Hainan Island. It is also an essential symbol of good luck and longevity during festivals.

Hainan noodles are rich and fragrant, soft and smooth, stimulating the appetite, so eat more without getting greasy. If you love spicy food, add a little chili sauce to make it more flavorful. When you have a small amount of noodles left at the end, add a small bowl of hot and steaming clam soup and eat it together, which is full of fragrance and endless aftertaste.

Rice noodles is made from rice and fanzi flour, and mixed with soy sauce, garlic puree, peanut oil, or sesame oil, boiled black bean sprouts, beef shreds, fried squid shreds, fried peanuts, fried sesame kernels, crispy fried noodles, chopped coriander, bamboo shoots, pickled Chinese cabbage and other auxiliary materials.

海南鸡饭是中国海南省文昌市的传统风味名菜,为海南菜系。19世纪末20世纪初,海南人“下南洋”的浪潮把海南鸡饭带到南洋。如今,海南鸡饭早已成为新加坡、泰国、马来西亚等东南亚国家的一道大众美食。海南文昌是海南鸡饭的发源地。在海南,海南鸡饭以文昌鸡为主料。文昌有120多万海外侨胞,遍布世界50多个国家和地区,被称为“华侨之乡”。 

海南鸡饭主要食材是鸡肉和大米,主要烹饪工艺是烫煮。海南鸡饭的主食材文昌鸡具有色泽淡黄光亮,皮脆肉嫩味鲜,入口喷香,爽滑异常的特点。

Hainanese chicken rice is a famous traditional dish in Wenchang, Hainan Province, China. At the end of the 19th century and the beginning of the 20th century, the wave of Hainan people "going to Nanyang" brought Hainanese chicken rice to Nanyang. Today, Hainanese chicken rice has become a popular food in Singapore, Thailand, Malaysia and other Southeast Asian countries. Wenchang is the birthplace of Hainanese chicken rice. In Hainanese chicken rice, Wenchang chicken is the main ingredient. Wenchang has over 1.2 million overseas Chinese, spread across more than 50 countries and regions around the world, and is known as the "hometown of overseas Chinese.".

清补凉,在海南话中清补凉的“凉”字会读成阴上声,与用作重量单位时的两字同音,是夏天清热祛湿的糖水。

清补凉的材料以健脾去湿和润肺为主。

清补凉多以糖水的形式出现,不同地区有其独特的风味和食疗效果。经过改良,清补凉除了原先的糖水以外,还有椰子水,椰奶,冰沙和冰激凌等不同吃法。海南清补凉结合了广东与广西所长,十来二十种材料,再添入海南产的新鲜椰肉、椰汁等,看上去属于糖水,吃起来软香丰富。

清补凉被誉为“舌尖上的清凉”。曾被苏轼誉为“椰树之上采琼浆,捧来一碗白玉香”。
